This is a good example, but is not one of the 150 recipes in my cook book.

Asparagus, red potato and Romano/Parmesan Frittata

3 med. red potatoes (cut in 1 in. chunks)
10 lg. eggs
1/2 – 3/4 c. Romano/ parmesan cheese combination (grated)
3/4 c. milk
1/4 tsp. black pepper
1 tsp. salt
1 pkg. frozen asparagus cuts (thawed)
1 tbs. margarine
1/2 bunch green onions (sliced with tops)

Cook potatoes in boiling water until fork tender. Drain, set aside. In med. bowl, whisk together eggs, cheese, milk, salt and pepper. Set aside.

In a lg. nonstick ovenproof skillet, melt margarine and sauté onions. Add cooked potatoes and cook 2 min. Stir in asparagus and cook for an additional 2 min.

If you do not have an ovenproof skillet; pour into a shallow baking dish and cover with egg mixture. Place baking dish in oven and bake at 375° for 20 – 25 min. or until knife inserted in center comes out clean.

Let set for 5 min. before cutting to serve. Makes 6 – 8 servings. (serve with side salad, whole wheat bread or muffins)
